Ingredients
- 2 ripe bananas, mashed
- 75 g oil or butter, melted
- 80 g light brown sugar
- 2 eggs
- 60 ml milk of choice
- 210 g flour
- 1 tsp baking soda (not baking powder—they’re different!)
- 1 tsp salt
- 2 tbsp Green Origins Organic Super Japanese Matcha Latte Blend
Optional Toppings
- ½ banana, sliced lengthwise
- Sprinkle of brown sugar
Method
- Preheat your oven to 175°C (350°F).
- Mash the ripe bananas in a mixing bowl, then stir in the melted butter and brown sugar.
- Whisk in the eggs and milk until smooth.
- Gently fold in the flour, baking soda, salt, and matcha blend—be careful not to overmix.
- Pour the batter into a greased loaf pan. If using, top with the sliced banana and a sprinkle of brown sugar for a golden, caramelized finish.
- Bake for 50–60 minutes, or until the loaf is risen, golden, and a skewer comes out clean.
- Allow to cool completely before slicing.
Serving Suggestion
Enjoy a slice on its own or with your favorite hot drink. For an extra treat, add a spoonful of creamy yogurt and a drizzle of maple syrup.
