Matcha Banana Bread

If you love banana bread and matcha, this recipe is a dream come true! Soft, perfectly sweet, and infused with the earthy richness of matcha, it’s the ultimate comfort bake that also gives you a gentle energy boost.

Ingredients

  • 2 ripe bananas, mashed
  • 75 g oil or butter, melted
  • 80 g light brown sugar
  • 2 eggs
  • 60 ml milk of choice
  • 210 g flour
  • 1 tsp baking soda (not baking powder—they’re different!)
  • 1 tsp salt
  • 2 tbsp Green Origins Organic Super Japanese Matcha Latte Blend

Optional Toppings

  • ½ banana, sliced lengthwise
  • Sprinkle of brown sugar

Method

  1. Preheat your oven to 175°C (350°F).
  2. Mash the ripe bananas in a mixing bowl, then stir in the melted butter and brown sugar.
  3. Whisk in the eggs and milk until smooth.
  4. Gently fold in the flour, baking soda, salt, and matcha blend—be careful not to overmix.
  5. Pour the batter into a greased loaf pan. If using, top with the sliced banana and a sprinkle of brown sugar for a golden, caramelized finish.
  6. Bake for 50–60 minutes, or until the loaf is risen, golden, and a skewer comes out clean.
  7. Allow to cool completely before slicing.

Serving Suggestion

Enjoy a slice on its own or with your favorite hot drink. For an extra treat, add a spoonful of creamy yogurt and a drizzle of maple syrup.
